1) Remove the scales of the fish and cut off the head portion.

2) Remove the guts by cutting the belly all the way to the center of the gills and clean inside with cool running water.
3) Place your knife blade lengthwise just slightly above the backbone and ribs of the fish and cut the flesh from head to tail. (First fillet)
4) Set it aside and make another fillet. (Second fillet)
5) Remove very fine bones on the fillet with your fingers or a pair of tweezers.
