Takikomi Gohan is a tasty Japanese side rice dish commonly seasoned with dashi and soy sauce. It is an excellent way to make your rice extra healthy by adding various ingredients such as vegetables and tofu. There are many recipes for making Takikomi Gohan but here is a simple and delicious one we recommend.
[Ingredients]
3 cups rice (450g)
2 Tbsp soy sauce
1 Tbsp dashi
2 Tbsp sweet sake
2 Tbsp sake
10g hijiki seaweed
30g edamame (frozen)
1 carrot
1 fried tofu
2 shiitake mushrooms (or 10g of dried shiitake)
1) Soak the hijiki seaweed and dried shitake in water for 15min.
2) Rinse rice and put in rice cooker.
3) Add all seasonings to the rice cooker and fill with water to the line for 3 cups of rice.
4) Rinse hijiki and shiitake then drain well.
5) Cut carrot and fried tofu into small pieces.
6) Add all ingredients to the rice cooker.
7) After the mixture finishes cooking, stir well and you’re ready to serve!
