How to Use a Hangiri for Sushi Rice

A hangiri, also known as a sushi oke, is a traditional Japanese wooden tub used to mix, season, and cool sushi rice.

Its wide, shallow shape gives freshly cooked rice enough room to release steam while sushi vinegar is gently folded through the rice. With the right technique, a hangiri can help you prepare sushi rice with a light, well-separated texture.

This guide explains how to use a wooden hangiri for homemade sushi rice.

What You Need

Before the rice finishes cooking, prepare the following items:

  • Freshly cooked Japanese short-grain rice

  • Sushi vinegar

  • Wooden hangiri

  • Rice paddle

  • Hand fan or electric fan

  • Clean, damp cloth

Sushi rice is usually seasoned while the rice is still hot, so it is helpful to have everything ready in advance.

Step 1: Prepare the Sushi Vinegar

Prepare the sushi vinegar before the rice finishes cooking.

A simple sushi vinegar mixture is usually made with rice vinegar, sugar, and salt. Mix until the sugar and salt are dissolved.

The exact balance can be adjusted depending on your taste, the type of rice vinegar used, and the dishes you plan to make.

Step 2: Lightly Dampen the Hangiri

Before adding the rice, wipe the inside of the hangiri with a lightly damp cloth.

The wood should be lightly damp, not wet. Remove any standing water before transferring the rice.

Lightly dampening the surface helps reduce excessive sticking and prevents dry wood from immediately absorbing too much moisture from the hot rice.

Step 3: Transfer the Rice While Hot

Transfer the freshly cooked rice to the hangiri while it is still hot.

Move the rice gently and avoid pressing it hard against the bottom or sides of the tub. Pressing or crushing the grains can make the finished sushi rice overly sticky.

Spread the rice loosely across the surface of the hangiri so the seasoning can be added evenly.

Step 4: Add the Sushi Vinegar

Pour the prepared sushi vinegar evenly over the rice.

Try not to pour all of the seasoning into one small area. Spreading it across the surface makes it easier to season the rice consistently.

Step 5: Fold the Rice with a Cutting Motion

Use a rice paddle to gently fold the rice.

Rather than stirring in circles, move the paddle through the rice with cutting and folding motions. This helps distribute the sushi vinegar without mashing the grains.

Work gently and turn the rice in small sections until the seasoning is evenly mixed.

Step 6: Fan the Rice While Mixing

Fan the rice while continuing to fold it gently.

Fanning helps release excess heat and steam. As the rice cools, the surface can become lightly glossy while the grains remain tender.

The rice should be cooled gradually, not dried out completely.

Step 7: Cover Until Ready to Serve

Once the sushi rice has cooled to approximately body temperature, cover it with a clean, damp cloth until you are ready to use it.

The damp cloth helps prevent the surface from drying out.

A hangiri is intended for preparing, serving, and temporarily holding sushi rice. It is not designed for long-term food storage.

Simple Sushi Rice Recipe

This recipe is for 2 cups of Japanese rice and can be adjusted depending on your preferred flavor.

Ingredients

  • 2 cups Japanese rice

  • 3β…“ tablespoons rice vinegar

  • 1β…“ tablespoons sugar

  • Just under 1 teaspoon salt

Instructions

  1. Combine the rice vinegar, sugar, and salt in a bowl.

  2. Mix until the sugar and salt have dissolved.

  3. Lightly dampen the inside of the hangiri.

  4. Transfer the hot cooked rice to the hangiri.

  5. Pour the sushi vinegar mixture evenly over the rice.

  6. Fold the rice gently with a rice paddle using cutting motions.

  7. Fan the rice while mixing to release excess heat and steam.

Avoid these common mistakes when preparing sushi rice:

  • Using the hangiri while completely dry: Wipe the inside with a lightly damp cloth before each use.

  • Leaving standing water inside: The tub should be lightly damp, not wet.

  • Stirring the rice too aggressively: Use gentle cutting and folding motions instead of stirring in circles.

  • Adding sushi vinegar after the rice has cooled: Sushi vinegar is usually added while the rice is still hot.

  • Filling the tub too deeply: The rice needs enough room to spread, fold, and cool.

  • Leaving the rice uncovered: Cover prepared sushi rice with a clean, damp cloth until serving.

What Can You Make with Sushi Rice?

Once prepared, the sushi rice can be used for many homemade Japanese dishes, including:

  • Temaki hand rolls

  • Chirashi sushi

  • Maki sushi rolls

  • Nigiri sushi

  • Sushi bowls

After Using Your Hangiri

After removing the rice, wash the hangiri promptly and dry it completely in a shaded, well-ventilated area.

Do not place a wooden hangiri in a dishwasher, microwave, oven, or heated dish dryer.
